Growing up we always had propane or gas grills at home. After a few trips to my buddy's place up North I've been lusting after charcoal grilling.
The fiance just picked me up a Weber Kettle Grill, just what I've been wanting to play with. Chimney starter included. About to grab some coals and get a cookin.

Two things that always work for me in my Weber
1. A good dry rub
2. Smoke chips soaked in water over night
You can always brine the meat too before applying the dry rub
I bank the coals against one side of the kettle, place the smoke chips in an aluminum pan over the coals
The meat (steak sometimes, more often a rib roast) goes on the grill on the side opposite the smoke chips and heat. Low and slow
